Poultry Meat allergy: a Review of Allergens and Clinical Phenotypes

Abstract Purpose of review In the recent years, more cases poultry meat allergy, both IgE- or non-IgE-mediated, are being reported. Patients have varied clinical reactivity at various levels sensitivity to different preparations. The lack validated biomarkers renders accurate diagnosis challenging. this review, we aim provide an overview current status allergy along with a description on allergens implicated. Recent findings Poultry occurs as result cross-reactions known egg yolk bird feathers genuine IgE-mediated in meat. Individuals can also develop non-IgE-mediated hypersensitivity reactions Chicken serum albumin is main responsible allergen secondary cases, while myosin light chain, α parvalbumin, enolase, aldolase, hemoglobin, and α-actin been recognized potential eliciting allergy. Summary There wide phenotypic variation among patients regarding severity cross-reactivity features. Recognizing entities important step towards providing management options that well received by patients.
